Scrappy Jessi's cookie swap~my recipe

White Chocolate and Cranberry Walnut Cookies
You will want to double the recipe for these. I think it's the almond extract that I like the most in this recipe.


White Chocolate and Cranberry Walnut Cookies

1/4 c. butter or margarine, softened

1/4 c. shortening

1/2 c. brown sugar, packed

1/2 c. granulated sugar

1 egg

1 teaspoon almond extract

1 1/2 c. all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

3/4 c. white baking chips

1 c. dried cranberries

1/2 c. chopped walnuts (or pecans)

Directions

1. Preheat oven to 350 F.

2. In a large bowl cream together the butter, brown sugar, white sugar, until smooth. Beat in the egg and almond extract. Combine the flour, baking soda, and salt; stir into the sugar mixture. Mix in the white chips, cranberries, and walnuts.

3. Drop onto cookie sheet using small scooper or shape into tablespoon size balls.

4. Bake in oven for 12-15 min. or until done. Do not over bake.

5. Cool for 5 minutes on baking rack and then remove from cookie sheet.

Makes 2 dozen

OOOOkkkkkkkkaaaaaaayyyy YUM!!!! With these ingredients, including the almond extract, of my, these must taste heavenly! I've made a white chocolate and cranberry cookie, but never with nuts and almond flavor! I will have to try this one! I have a freezer full of cranberries (grown locally here on the coast) so I can dry my own cranberries (in food dehydrator) and make these! YUM, thanks for sharing!
